One of my favorite dishes in the entire world is Caprese Salad. A simple combo of locally grown tomatoes, mozzarella and basil from my mini-garden is hard to beat. However, I’ve found a tweaked version of a Caprese Salad that rivals the original.

Meet: the Peach Caprese Salad with Salted Curry. On the way to a quick weekend beach getaway we stopped on the side of the road at a peach stand and have been devouring peaches ever since. Here are a few shots of one of my recent favorite uses of the most perfect summer fruit.

The general gist of the recipe: Sweet, juicy peaches layered with creamy, salty mozzarella. Add some fresh basil & mint from the backyard and drizzle with a mixture of olive oil, champagne vinegar and honey. Finally sprinkle sea salt mixed with Madras curry powder. Eat, savor and enjoy.
