I am deeming this summer the summer of salads. All of the fresh produce and bold colors are finding their way onto my plate in unique combinations, and I couldn't love it more. The peppery arugula was a perfect contrast to the earthy sweetness of the beets and the fresh figs. Truth be told, anything with fresh figs is good in my book! I loved plating and styling this salad because the colors just pop right off of the background. Food styling and food photography are surely fun when the subjects are this beautiful! Paired with a cold glass of Chardonnay, this Arugula Salad with Figs and Roasted Beets was perfect for a summer meal.
