Happy 4th of July, everyone! There’s no better way to celebrate Independence Day than with friends and family, an adventure, delicious food and a tasty cocktail on the patio. Here’s to the red, white and blue – or should I say Blueberry Mojito!

I’m whipping up this patriotic-inspired cocktail as a celebration of my husband’s first week as a resident and of America’s birthday! I hope you get to enjoy one during tonight’s July 4th festivities too!

How to:

Combine 2 cups of sugar, 2 cups of water and 1/2 cup of fresh blueberries in a medium saucepan and heat to a simmer, smashing the blueberries to release the color and flavor. Set aside the blueberry simple syrup to cool completely. Strain when cooled to use for cocktail and store (will make about 10 drinks).

Muddle 10 mint leaves, 1 ounce fresh lime juice, 1 ounce of cooled blueberry simple syrup, and 10 fresh blueberries in a glass. Add 2 ounces of light rum and top with crushed ice and club soda. Stir and garnish with mint, blueberries and raspberries for an extra patriotic punch. Head out to the patio and enjoy!

      So, so delicious! Definitely worth making – and you’ll have blueberry simply syrup for the whole block, so invite friends to join. 😉
