With summer in full swing and heat on the rise, I’m looking for options for delicious, cold lunches. Salads have been on my agenda quite a bit these days, and this salad is particularly tasty, not to mention beautiful! I love the bold colors and Asian flavors of this healthy summer lunch choice.
